Instant Pot Mexican Queso Recipe

Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 tablespoons hot taco seasoning (a package)
  • 10 ounces ro-tel fire roasted diced tomates and green chilies
  • 32 ounces Velveeta cheese, cut into cubes (one box)
  • tortilla chips, for serving
  • vegetables, for serving

Instructions
 

  • Turn instant pot on saute and wait until hot.
  • Add the ground beef, onion, seasonings, green chilies, and tomatoes. Cook while crumbling the beef, until no longer pink.
  • Add the Velveeta to pot. Do not stir. Place lid on and turn vent to sealing position.
  • Cook on manual high pressure for 4 minutes.
  • When timer is done, do a quick release. Keep stirring until everything is well combined.
