“Indulge in the rich, creamy goodness of this Pina Colada Rice Pudding!”

Now that we have all the necessary ingredients, we can finally start cooking. This Instant Pot Pina Colada Rice Pudding Recipe is easy to make and takes no more than an hour from start to finish.

Step 1: Combining Ingredients

First, turn on your Instant Pot and press the “sauté” button. Add in 1 tablespoon of coconut oil and let it heat up. Once it’s hot, add 1 cup of arborio rice and stir until the rice is coated evenly with the oil.

Next, add in 2 cups of water, 1 can of coconut milk, and 1 cup of pineapple tidbits (drained). Stir well to combine all ingredients.

Step 2: Pressure Cook

Secure the lid of the Instant Pot and set it to pressure cook on high for 10 minutes. Make sure that the valve is set to “sealing”. Once the timer goes off, allow natural pressure release for 10 minutes before switching to manual release.

Step 3: Add Milk, Eggs, and Sugar

Remove the lid from your Instant Pot and press “cancel”. Set the pot to “sauté” mode once again.

Add in 3 cups of milk, 2 eggs, 1/2 teaspoon salt, and 1 cup of sugar. Stir until all ingredients are combined.

Step 4: Cook Milk Mixture

Bring the mixture to a boil while constantly stirring for about 5 minutes or until it thickens into a pudding-like consistency.

Once it’s thickened, turn off heat and allow it to cool slightly before serving.

Substitutions and Variations

“Instant Pot magic never ceases to amaze me!”

I am quite the adventurous chef, and I enjoy playing around with variations. Luckily, this Instant Pot Pina Colada Rice Pudding Recipe lends itself well to creativity with its simple yet elegant flavors. Here are some ideas you can try:

– Pineapple Coconut Rice Pudding: If you love pineapple, like me, swap the pineapple tidbits for a cup of well-drained crushed pineapple and add an extra 1/4 teaspoon of coconut extract to the mix.

– Arroz con Leche: This Latin American cousin of the rice pudding is spiced up with cinnamon sticks that you simmer in the milk mixture. Add one teaspoon of ground cinnamon to the mixture instead of vanilla extract and cinnamon spice on top.

– Creamy Coconut Rice: Skip the eggs and use one cup of coconut cream or evaporated milk instead of regular milk for a richer flavor. You can also mix in some unsweetened shredded coconut flakes before serving for texture.

– Vegan Coconut Rice Pudding: For my vegan friends, replace the eggs with two tablespoons of unsweetened applesauce or two tablespoons of cornstarch mixed with two tablespoons of water. Use canned coconut cream instead of condensed milk.

These are just a few ideas of what you can do with this versatile recipe. Don’t be afraid to experiment and find your own favorite version!

Serving and Pairing

“Just a few simple steps to a dessert that will transport your taste buds to the beach.”

As a chef specializing in Vietnamese and Asian cuisine, I enjoy pairing this pina colada rice pudding with tropical fruits like sliced mango, kiwifruit, and papaya. The flavors complement each other and create a refreshing ending to any meal.

For a more indulgent dessert experience, I suggest topping the rice pudding with whipped cream or toasted coconut flakes. The creamy texture of the dish pairs perfectly with the light and airy taste of whipped cream.

In addition to being a delightful dessert, this pina colada rice pudding can also double as a breakfast dish. For breakfast, you can pair it with bacon or sausages to add some savory elements to the meal.

Another excellent pairing option is to serve this rice pudding alongside some hot brewed coffee or tea. The richness of the coffee or tea will contrast well with the creamy smoothness of the pina colada rice pudding, creating an enticing combination that has my taste buds dancing.

Whether you’re pairing it with bold, colorful fruit, spice-flavored coffee or tea or having it as breakfast food or dessert, your pina colada rice pudding will be an outstanding treat that will have everyone fully satisfied.

Make-Ahead, Storing and Reheating

“Coconut and pineapple – the perfect combination for a refreshing dessert.”

Like most rice pudding recipes, Instant Pot Piña Colada Rice Pudding can be made two days ahead and stored in the refrigerator until ready to serve. The chilling time allows the rice pudding’s flavors to meld beautifully, resulting in a creamier mixture that is irresistible to the palate.

When storing leftover Piña Colada Rice Pudding, transfer it into airtight containers or cover it tightly with plastic wrap. Use a marker to label the container with the date of storage. This recipe keeps well for up to 5 days when refrigerated at 40°F or below.

To reheat individual servings, microwave for 45 seconds or until just heated through, stirring every 15 seconds to avoid any clumps. Alternatively, you can reheat it on low heat on a stovetop. Whisk in additional milk if needed to adjust the consistency.

If you plan to make a large batch for future use, allow the pudding to cool down completely before storing it in freezer-safe bags or containers. This recipe freezes well for up to 2 weeks when stored at 0°F or below. To thaw, simply move the container to the refrigerator overnight and heat gently on low heat.

Overall, storing and reheating Instant Pot Piña Colada Rice Pudding is effortless, making it an ideal dessert recipe for dinner parties or anytime you’re craving something sweet and creamy.

Tips for Perfect Results

“You won’t be able to resist the aroma of coconut wafting from your Instant Pot.”

When making Instant Pot Piña Colada Rice Pudding, there are a few things to keep in mind to ensure perfect results every time. As a chef who specializes in Asian cuisine, I have made my fair share of rice puddings and I have some tips that can help you take your pudding to the next level. Here are some of my top tips for achieving the perfect Instant Pot Piña Colada Rice Pudding.

One important thing to keep in mind is the type of rice you use. Arborio rice is the best option because it has a high starch content which gives the pudding its creamy texture. Make sure not to overcook the rice, or it will turn into mushy and lose its unique texture.

Another tip is to use high-quality ingredients. Use fresh pineapple tidbits and real coconut milk instead of coconut extract or cream of coconut. This will make a significant difference in the flavor of your pudding.

When cooking, try not to disturb the rice too much while it’s softening since this could break apart the grains and cause them not to soften correctly. Once finished cooking, let it naturally release pressure for 10 minutes, then quick-release remaining pressure.

It’s essential to be patient and allow the pudding to cool down before serving or storing—a hot warm pudding isn’t as appealing as chilled pudding. Allow it to cool on the counter for an hour, then chill overnight in the fridge.

Lastly, if you want to take this dessert over-the-top, serve it with freshly whipped cream and toasted coconut flakes. It adds a lovely texture to your smooth & creamy rice pudding.

With these tips and tricks, you’ll be able to achieve the perfect Instant Pot Piña Colada Rice Pudding every time!

FAQ

As with any recipe, there may be some common questions or concerns that come up during the cooking process. Here are some frequently asked questions about our Instant Pot piña colada rice pudding recipe to help ensure your dish turns out as delicious as possible.

Why is my rice in Instant Pot mushy?

If you find yourself with a batch of instant pot rice that is too soft and mushy, it is likely that you have added more water than the recommended 1 to 1 ratio. To ensure optimal rice texture, be sure to measure out the same amount of rice and water using the same container. By following these simple steps, you can avoid any mishaps and ensure your rice is cooked to perfection.

What thickens rice pudding?

So, you’ve made rice pudding and it’s not quite thick enough for your liking. Don’t worry, there’s a simple fix! My favorite way to thicken rice pudding is by creating a slurry with cornstarch and water. All you need is a teaspoon of cornstarch and a tablespoon of water or existing liquid from the pudding mixture. Combine the two until it’s smooth and then add it to the pudding. It’s a quick and easy solution to your thin pudding problem.

Why is my rice pudding not thick enough?

Sometimes, your rice pudding could end up with a thin consistency due to inadequate cooking at the end. In such a scenario, it might require saving. To fix this issue, take a saucepan and pour the rice pudding into it. Gently heat the mixture and stir in some cornstarch that is mixed with cold water, a little at a time, until the consistency thickens as per your preference.

Why is my rice pudding too thick?

It is possible that the high temperature of your oven, selection of a fan oven setting, or using a shallow dish with a larger surface area could have affected the outcome of your dish.

Instant Pot Pina Colada Rice Pudding Recipe

This recipe came with my Instant Pot and the whole family enjoyed it. I'm one that loves rice pudding but not the raisins that many put in it. This has the flavors of coconut with chunks of pineapple and the ease of using the Instant Pot. TIP: Aborio rice maintains firmness and creaminess when making rice pudding. For optimal results, do not substitute with white rice.
