Now that we have all the ingredients ready, it’s time to get cooking. In this section, I will walk you through how to make this delicious Chicken Chorizo Hotpot recipe step-by-step.

Step 1: Preparing the Vegetables

To begin with, we need to cut the onions, red and green capsicums, and potatoes into small pieces. Don’t worry about being precise here, as the vegetables will cook down in the stewed and become soft anyways. The only thing to keep in mind is that you should try to keep the pieces of roughly equal size so that they cook at the same rate.

Step 2: Cooking the Chorizo

Next, we need to cook the chorizo sausage. Heat a tablespoon of olive oil in a large pot on medium heat. Once hot, add sliced chorizo and sauté for about 5-7 minutes, or until they release their oils and start to crisp up. With a slotted spoon, remove them from oil and transfer them onto a plate.

Step 3: Cooking the Chicken

In the same pot used for chorizo, add chicken thighs which has been cubed into 3cm-sized pieces. Season with salt and freshly ground black pepper. If you want, you can add more spices like dried fennel, oregano or rosemary at this point for an extra burst of flavor. Sauté for approximately five minutes before removing them from heat.

Step 4: Sautéing Garlic and Onions

Add some minced garlic (2 cloves) and quartered red onions into the pot where chicken has previously cooked. Cook over low heat for around five minutes or until onions become translucent.

Step 5: Adding Potatoes and Capsicums

Add your cut potatoes, capsicums to the pot with garlic and onion mixture. Pour in some white wine if you have any available, but if you don’t, you can use water as a substitute for an equally delicious result. Cook for approximately 5 minutes, or until vegetables start to soften.

Step 6: Adding Chicken, Chorizo and Additional Seasonings

Add the cooked chicken back into the pot along with the sautéed chorizo. Stir everything together and add about 1 tablespoon of cornflour to thicken the sauce. For additional seasoning, feel free to add smoked paprika as desired.

Step 7: Let it Simmer

Once all ingredients are combined in the pot, lower the heat and let them simmer for around 30 minutes. This is done to ensure that all of the ingredients have enough time to meld together and become extra flavorful. After half an hour, your Chicken Chorizo Hotpot should be thick, hearty, and ready to serve.

Enjoy your Spanish-inspired concoction!

Looking to switch things up? This chicken chorizo hotpot recipe is versatile, making it easy to make substitutions and variations. Here are a few options to consider:

– Meat Substitutions: If you don’t have chicken thighs or chorizo on hand, feel free to substitute with other proteins such as pork, beef, or lamb. Alternatively, for a vegetarian twist, you can use tofu or tempeh as a meat substitute.

– Vegetable Additions: For added flavor and nutrients, you can easily add in more veggies to this chicken chorizo hotpot recipe. Some great options include carrots, green beans, zucchini, or butternut squash.

– Spice Variations: To switch up the flavors in this dish, try experimenting with different types of paprika. For example, if you want a smoky flavor, go for smoked paprika. Or if you’re looking for something a little spicier, try using hot paprika.

– Tomato Casserole Variation: Want to mix things up even more? Consider turning this hotpot recipe into a tomato casserole by adding in some chopped tomatoes and baking it in the oven. Simply prepare the hotpot as directed but add chopped tomatoes to the mix before transferring it to a baking dish. Sprinkle with cheese and bake for 20-30 minutes until bubbling and golden brown.

Now, that you have created an irresistible chicken chorizo hotpot, it’s time to think about how to serve and pair it! This hotpot has the perfect balance of spiciness and heartiness and deserves to be paired with a complementary side dish. I recommend serving it with crusty bread, steamed rice or oven-baked potatoes. These sides will help to absorb the flavor-packed sauce of the hotpot, leaving no drop behind.

Furthermore, if you’re looking to add some greens to your meal, try serving it with a fresh arugula or spinach salad dressed in olive oil and balsamic vinegar. The pepperiness and earthiness of the greens will help to cut through the richness of the hotpot and bring some bright flavors into the mix.

For a complete sensory experience, pair this chicken chorizo hotpot with a full-bodied red wine, like Cabernet Sauvignon or Syrah. You can also enjoy this dish alongside a cold beer. The lightness of the beer will help balance out the spiciness of the chorizo sausage in the hotpot.

Overall, this chicken chorizo hotpot offers endless pairing options. Experiment with what works for you and let your palate guide you to an unforgettable meal.

Make-Ahead, Storing and Reheating

Cooking a sumptuous chicken chorizo hotpot could be time-consuming for someone who is always on-the-go. That’s why making it ahead of time is a smart move to get satisfying meals without compromising nutrition.

One good thing about this dish is that it gets better once it’s been reheated and stored properly. You could also store your leftovers in an airtight container in the refrigerator or freezer for future meals.

To make-ahead, you can complete the steps until you are ready to add the chicken and chorizo. Let the mixture cool completely before storing it in the refrigerator or freezer.

If you’ll be storing your hotpot for later use, let it cool to room temperature before transferring it into an airtight container. This will ensure that the moisture content wouldn’t condense and spoil when cooled abruptly.

Another exceptional factor is that reheating this dish doesn’t affect its taste or texture significantly. You can reheat this hotpot on the stove, microwave or oven depending on what works best for you. Reheating allows flavors to intensify more and adds richness to every bite.

When reheating, cook the frozen or chilled chicken chorizo hotpot over medium heat in a pan with some added water for about 10-15 minutes or until heated through. You could also place it in the oven preheated at 350 degrees Fahrenheit for 30-35 minutes.

A pro tip from me is to add a bit of extra salt and pepper to rejuvenate the flavors while reheating especially if you prepared it ahead of time. This makes it look like you just freshly prepared the meal!

Therefore, worrying about not having enough time for home-cooked meals should not be an issue anymore with this dish as there’s always room for make-ahead, storing, and reheating.

When making the Chicken Chorizo Hotpot, you want to ensure that the flavors are perfectly balanced and that the dish is cooked to perfection. Therefore, I have compiled some tips to help you make the most delicious hotpot possible.

Firstly, don’t skip out on searing the chicken and chorizo before adding them to the hotpot. This will lock in their lovely flavors and add a delicious caramelization to the hotpot. Be sure not to overcrowd your pan when searing, as it could result in soggy or uncooked meat.

Next, season your hotpot with salt and black pepper to taste. You can also add some smoked paprika for that extra smoky flavor, but be careful not to overdo it as it can quickly become overpowering.

For a thicker sauce in your hotpot, mix 1 tbsp of cornflour with some cold water until smooth and then stir it into the pot during the last 10 minutes of cooking. This will help thicken up any excess liquid and give your hotpot a rich consistency.

If you want a vegetarian version of this dish, substitute the chicken and chorizo with vegetables like sweet potatoes or butternut squash, and add some chickpeas for protein. This will maintain the heartiness of the hotpot while delivering a nutritious twist.

Lastly, don’t be afraid to experiment with different ingredient variations. Try using different kinds of peppers or potatoes for added texture and flavor. Or switch up your wine selection by using white wine instead of red for a different flavor profile.

By following these simple tips, you’ll be able to turn out a mouth-watering Chicken Chorizo Hotpot that is sure to impress your friends and family. So go ahead and get creative – you won’t regret it!

  • When it is ready, combine the cornflour in a cup with enough cold water to make a runny paste. (Cold water is important - otherwise it will go lumpy).
